How many times have you meant to grab something to eat or forgot to get something ready for the kids? I know I have done that A LOT! It’s really easy to grab something like a frozen pizza, but that can be full of tons of preservatives and other artificial ingredients! The Crunchy family has been trying to eat a lot better lately, so I have been coming up with quick meal ideas like this quick naan pizza recipe! It takes literally less than a minute to put together, and it’s yummy!

Since moving to Minneapolis, I have been able to try a few new stores that I haven’t been around before. One that I have already fallen in love with is Trader Joe’s! They have great natural foods at prices that won’t break the bank. That’s where we got this delicious garlic naan bread to make this pizza recipe! Most of their ingredients have very few artificial colors or flavors in them. I don’t know about you, but I like being able to read the ingredients on the back of the label!

Don’t have a Trader Joe’s near you? Don’t fret! You can find naan bread near the flat bread in most regular stores! To make it garlic naan bread just dust it with a little garlic powder!

Enough of my jabbering, here’s how to make this great (and easy) naan pizza recipe! Enjoy!

Quick Lunchtime Naan Bread Pizza Recipe!

Ingredients

  • Trader Joe's Garlic Naan Bread (or other naan bread)
  • Your Favorite Chunky Spaghetti Sauce
  • Mozzarella Cheese (to taste)
  • Your Favorite Pizza Toppings

Instructions

  1. On a microwave safe plate, place a piece of naan bread.
  2. Cover with desired amount of spaghetti sauce.
  3. Then top with as much cheese as you heart desires!
  4. Finish it off with your favorite pizza toppings.
  5. Place in the microwave for approximately 30-60 seconds until cheese is bubbly.

Homemade Chicken Noodle SoupOne of my favorites soups is homemade chicken noodle soup! It’s super easy to make, and you will usually have enough left over to have soup for a few days. My family loves serving this soup with warm corn bread or crackers. (I am partial to the corn bread myself)

This recipe is a really easy crockpot recipe that you can prep in the morning and turn  on when you get home and are winding down after work and school. It only takes about an hour in the crock pot on low. Throw the muffins in the oven while you wait, and dinner is ready!

Crock Pot Recipes: Homemade Chicken Noodle Soup

Ingredients

  • 2 Large Cartons Vegetable or Chicken Broth
  • 2 Large Bone-In Chicken Breasts
  • 3 Carrots
  • 2 Stalks of Celery
  • Bay Leaf
  • All Purpose Seasoning (to taste)
  • Bag of Dry Pasta Noodles
  • Garlic powder (to taste)
  • Pepper (to taste)

Instructions

  1. Cut up carrots and celery in smaller chunks.
  2. Remove skin from chicken breast, and remove from bone.
  3. Cut Chicken up in Bite sized chunks.
  4. Pour broth into crockpot, and add carrots and celery
  5. Cook chicken in a pan until just under done. Season with garlic and pepper to taste
  6. Add chicken to crockpot, and add All purpose seasoning to taste
  7. Cook on low for about 45 minutes, then add noodles.
  8. Cook for an additional 15 minutes or until noodles are tender

This easy cheese fondue recipe has been one of my tried and true recipes over the years! It’s great for almost any holiday occassion, but is surely a treat to enjoy on Valentine’s Day!

I was inspired to make this recipe after visiting the Melting Pot, an amazing fondue restaurtant. This place is to die for, but it definitely breaks the budget at $100+/couple! That’s without drinks!

You guys know me, rather than spend that kind of money,  I set off to find a way I could make some amazingly easy cheese fondue at home. This recipe is so simple that even the most beginner cook can have an amazingly tasty fondue

Amazingly Easy Cheese Fondue Recipe!

Amazingly Easy Cheese Fondue Recipe!

Ingredients

  • 1 cup Swiss Cheese
  • 1 cup cheddar cheese
  • 1 Tbsp flour
  • 1 tsp dry mustard
  • 1 tsp garlic powder
  • fresh cracked pepper (to taste)
  • 1/2 cup beer
  • French bread or Italian bread
  • Fondue pot (or metal bowl and regular pot)
  • Fondue Skewers

Instructions

  1. Cut a loaf of French bread across in normal slices. Then cut these slices into 1 inch strips. Cut the strips in thirds to have cubes of bread.
  2. Grate 1 cup of cheddar cheese and 1 cup of swiss cheese is a medium bowl.
  3. Put 1 Tbsp of flour in bowl with cheese and toss cheese to coat it in the flour
  4. Heat up your double boiler, fondue pot, large pot with water and bring water to gentle boil
  5. Place top part of fondue pot over water, and place 1/2 cup beer in pot
  6. Add dry mustard, garlic powder, and pepper to beer
  7. Once beer is almost boiling, add cheese about 1 tbsp at a time constantly stirring with fork until melted.
  8. Keep stirring until the cheese has a runny consistency, it should not be clumpy. If it is clumpy try adding a little bit more beer, just a little at a time until you achieve the desired consistency. If it is too runny add more cheese or a little more flour.

Don’t be afraid to play around with the mustard, garlic, and pepper. I usually just season to taste. You can always add more when you are melting the cheese. The beer adds such a great flavor to the fondue. I could eat a whole pot myself!

Note: After making this recipe for the first time with a sterno fueled fondue pot, I figured out it is SO much easier to do this in an electric one! I snagged this Cuisinart Electric fondue pot on Amazon, and it usually goes on sale pretty regularly.

Dadgum Good Garlic and Herb Deep Fried Turkey

Being from the South, there is always a little bit of my heart, err stomach, that loves something deep fried.

This year Mr Crunchy and I thought we would do a trial run and try a deep fried turkey recipe. We have never done it before, but I have watched enough Spike TV to know that unless you have the Fire Department on speed dial that you never fry a frozen bird. (even if you are frying WAAYY out back)

With Thanksgiving coming up, what could be better than a deliciously succulent deep fried turkey recipe. Frying your turkey isn’t the healthiest option, but it is the most amazing turkey that I have ever had! The skin is perfectly cripsy, and the meat lick it off your chin juicy!

If you are looking for a deep fried turkey recipe, you have to try this garlic and herb deep fried turkey recipe from “Dagum That’s Good, Too!” by John McLemore! This recipe is the best turkey I have ever had! Here’s what you have to do to make your bird hit of Thanksgiving this year!

Ingredients

1 fresh or frozen turkey (1o to 14 pounds) Remember frozen turkey plus fryer equals your house becomes a flambe!

2 gallons cooking oil, preferably peanut oil

1 (16 oz) bottle Butterball Garlic and Herb Turkey Marinade or your favorite brand

Butterball Garlic and Herb Turkey Seasoning or your favorite brand.

Directions

THAW TURKEY.

Pat turkey completely dry on outside and inside of cavity with paper towels.

Using a marinade injection syringe, inject 1/2 cup marinade in each breast.

Inject 1/4 cup marinade into each leg and thigh.

Sprinkle turkey generously w/ turkey seasoning, completely coating inside and out.

Place turkey, breast side up in fryer basket. Slowly lower basket into hot oil. Fry turkey 3 to 4 minutes per pound. Lift the basket from the hot oil slowly. Insert the meat themometer. When it reads 165 degrees, the bird is done.

Allow the turkey to rest and drain in the fryer basket for 10 minutes before carving.

Now onto our recipe! We used a mixture of the dry-rub spices and the Kraft BBQ sauce. They were the most amazing ribs I have ever head. (Being a southern gal, I have eaten my fair share of pork ribs!) They were tender and juicy, and oh so good! I told Mr. Crunchy this was his best feat on the grill yet!

Ingredients

  • 2 lbs country style bone-in pork spare ribs
  • McCormick Dry Rub Seasonings
  • Kraft Brown Sugar BBQ sauce

Instructions

  1. Make sure ribs are fully defrosted, then rub the outside of the ribs with McCormick dry rub and let set for 10 minutes.
  2. Grill on the grill at medium heat for about 10-15 minutes, until thoroughly cooked.
  3. Baste with Kraft Honey BBQ sauce as you are cooking the ribs. The more, the better!
  4. Remove ribs from grill and let set for approximately 5 minutes.
  5. Slice ribs off the bone and serve!

Hot Dog RecipesEating a hot dog is one of my favorite things to do during the summer! Do you have to only eat them on the grill though? Heck no! We love to eat them all year round!

My whole family loves this twist on an American classic, and they are really easy to make. These Garlic Cheddar Crescent Dogs only take the time it takes to bake the crescent rolls. In addition to the cheese, there are so many ways you can dress these dogs up. Add some mustard, ketchup, chili, onions whatever you would add on your regular frankfurter! Get creative with it. Get the kids involved! In celebration of National Hot Dog month, I share with you this great recipe!

Garlic Cheddar Crescent Dogs

Great take on the hot dog. Jazz it up with this simple recipe. Your family will love it

Ingredients

  • 8 hot dogs ( we prefer turkey dogs)
  • 8 crescent rolls (1 tube)
  • Shredded Cheddar cheese
  • Garlic Powder

Instructions

  1. Preheat your oven per the crescent rolls instructions.
  2. Spray a baking sheet and unroll the crescent rolls.
  3. Place a hot dog on top of each roll, and slit the hot dog long ways (not all the way through)
  4. Stuff each hot dog with cheddar cheese.
  5. Roll the crescent roll around the hot dog. Make sure cheese side is up.
  6. Sprinkle more cheese and garlic powder (to taste) on the top.
  7. Bake per crescent package instructions. Enjoy!

Dogs are quite possibly one of the most American foods. Obviously I love mine with lots and lots of cheese on them. This recipe is one of my favorite twists on the hot dog.

Burger Recipes: Parmesan Garlic Burger

burger recipesLooking for a twist on the all American favorite burger. Everyone has burger recipes in my family, but this parmesan garlic burger recipe is sure to please/surprise them all. It’s really easy to make, plus it’s even a little better for you since it’s made with 99% lean turkey in addition to the regular ground beef. (Shhhh don’t tell them before they try it).  My family loves grilling during the hot summer months, and we are always trying new recipes like this one. It’s amazing how just a few twists make a completely new dish! These easy to make patties are sure to win everyone over at your next family get together!

Parmesan Garlic Burgers

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: 35 minutes

Yield: 7-8 patties

4 oz burger

Ingredients

  • 1 pound 99% Lean Jennie-O ground turkey
  • 1 pound ground top sirloin
  • 1/2 cup freshly grated parmesan cheese
  • 3 T McCormicks Hamburger Grillers Seasoning
  • 3 T Worcestshire Sauce
  • 2 T Garlic Powder

Instructions

  1. In a large bowl place the ground turkey and sirloin.
  2. Add all of the other ingredients in bowl, and mix together with your hands until well blended.
  3. Grab small balls of the mixture and flatten out into patties
  4. You should have about 7-8 patties when they are all flattened out.
  5. Preheat outdoor grill on high for about five minutes
  6. Cook burgers about 5 minutes on each side until desired level of doneness
  7. Serve on a whole wheat bun with your favorite burger toppings!

The first time Mr. Crunchy had this recipe, he instantly fell in love with it. He always whined that turkey burgers were too dry. By adding a little bit of beef to this recipe, it helps give the burger some moisture and a little added flavor. The rest of the flavor comes from the aged parmesan and the garlic. (He can never have TOO much garlic, I don’t mind as long as there is a toothbrush handy ;) )

Low Country Shrimp BoilCorn Fritters, corn dumplings, corn pancakes, corn on the cob. (ala Forest Gump) The sky is the limit when it comes to corn recipes.  When summertime comes around, that’s one thing that is always on the menu: fresh sweet corn!

Growing up in Savannah, a dish that was always on our table was low country shrimp boil. Of course, any shrimp boil isn’t complete without the freshest corn you could find. It’s always so plump and juice, you end up needing a bib for all the sweet corn juice dribbling down your chin!

You definitely have to know what you are doing when you boil the corn though. To get the best sweet corn, make sure to check out these tips on how to boil your corn.

Low Country Shrimp Boil: Amazing with fresh sweet corn!

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Yield: 8

Ingredients

  • 3 pounds of raw unpeeled shrimp
  • 6 ears of sweet corn on the cob (cut into thirds)
  • 2 T Old Bay Seasoning
  • 2 links Kielbasa sausage (cut into 4 inch pieces)
  • 10 red potatoes

Instructions

  1. Fill a large pot with water and add Old Bay seasoning, bring to a boil
  2. Once boiling, add potatoes and sausage. Boil for 20 minutes
  3. Add corn, and boil for additonal 10 minutes
  4. Add shrimp, and boil for final 2-3 minutes until shrimp is pink
  5. Drain water and serve

Can’t enough corn during the summer, well you’re in luck. Corn is relatively easy to enjoy year round. It makes the most fabulous sweet corn chowder to warm you up on a winter morning, or better yet corn fritters covered in powdered sugar. Now that is an amazingly easy springtime treat! When I go out to the local deli, my absolute favorite dish to order is a french dip sandwich. There is something about the melty, cheesy, meaty goodness that makes my mouth water. (Is yours watering yet??)

The only problem is they can be expensive to buy all the time at $8-$9 a sandwich. So, to lighten the burden on my wallet, I set out to recreate my favorite sandwich at home. This sandwich is amazingly easy to make, and you can add your own twists to make it your favorite indulgence too! Now onto the french dip sandwich recipe!

Amazingly Easy French Dip Sandwich Recipe
Recipe Type: Entree
Prep time: 5 mins
Cook time: 15 mins
Total time: 20 mins
Serves: 6
Ingredients
  • 1 pound thinly sliced roast beef
  • 1/2 pound provolone cheese
  • 1 clove garlic
  • 1/2 small onion
  • 1 McCormick Au Jus packet
  • 6 Mini Sub Rolls
  • 1 T Butter
Instructions
  1. In a sauce pan, gently sautee the garlic and onions until soft.
  2. Add the Au Jus Packet, and follow instructions on preparation.
  3. Once Au Jus is complete, add roast beef into au jus and let soak for approximately 5 minutes.
  4. While roast beef is simmering, lightly butter the inside of the sub rolls and place in a frying pan to toast the insides of the rolls.
  5. Lay buns toasted side up, then place 2-3 slices of roast beef on each sandwich.
  6. Cover with 1-2 slices of provolone cheese, and onions (if desired)
  7. Ladle out the au jus in separate ramekin for dipping.
  8. Enjoy!

 

Crock Pot Recipes: Barbecue Beef Brisket with Garlic Rosemary Focaccia

Barbecued Beef Briscit Recipe

Being a girl from the South, barbecue is in my blood. I think I was raised with a pulled pork sandwich in one hand and hush puppies in another. (If you don’t know what hush puppies are, you should hang your head in shame!) My husband is a genious when it comes to the crock pot! Yep, the crock pot. It’s one of the easiest dishes we make when we have a really busy day. This is his latest creation using a Charcrust Barbecue rub we were able to find, and it happens to be on of my favorite crock pot recipes!

 

Barbecued Beef Briscit Recipe Ingredients

A Corned Beef Brisket (leave out the corning spices)

Your favorite whiskey (Jack Daniels is a good choice)

Charcrust Dry Barbecue Rub

Garlic Powder

Pepper

Beef broth

Focaccia Bread

Garlic Powder

Butter

Directions

Open your beef brisket, rinse off and pat dry. Take the Charcrust Barbecue Dry Rub and coat the brisket before place it in the crock pot

Put your crock pot on low, and then place in your beef brisket.

Add 1-2 shots of your favorite whiskey to give it a little kick.

Cover the brisket with 16 oz of beef broth, then if still not covered add water until meat is covered.

Sprinkle in garlic powder and pepper to taste.

Put lid on crock pot, and cook on low for approximately 4-6 or under brisket pulls apart easily with fork.

When brisket is done, preheat the oven to 350 degrees.

Butter the focaccia bread, sprinkle with garlic powder and rosemary.

Put in the oven for about 5-10 minutes until golden brown.

Now it’s ready to serve. This meal takes about 5-15 minutes tops in bread time, and it’s absolutely delicious!

Tuna Noodle CasseroleJust because you want to make frugal recipes, doesn’t mean that you have to sacrifice taste. This is the best of the tuna noodle casserole recipes, and I have been having it since I was a little kid. It is one of my all time favorites. The best part is you can feed a family of 6-8 for around $5! I would definitely classify it as one of my all time favorite comfort foods!

Ingredients

1 cans tuna in water (drained) (75 cents)

1 cans sweet corn (drained) (65 cents)

1 cans cream of mushroom soup (70 cents)

8 oz cheddar cheese ($1.29 bought locally)

16 oz box of macaroni noodles (50 cents)

Total Cost $3.89 or 48 cents a serving

Directions

Preheat oven to 350 degrees

Place a large pot full of water on stove to boil. Once boiling place noodles in, and boil them until tender (approximately 15 minutes)

Open all cans, drain (if applicable), and place in 13X9 baking dish.

Drain pasta and place in baking dish. Then use large spoon to mix all ingredients together until pasta is thoroughly coated.

Sprinkle the top with cheddar cheese.

Place in oven for approximately 25 minutes until cheese is melted and bubbly.

I love Mexican food. It is a vice I have, so in the effort of being frugal I have set out to learn how to make some of my favorite Mexican restaurant dishes. First up is enchiladas. I could literally eat my weight in enchiladas. (Ok, yes I would probably be sick, but it would be so worth it!)

Enchilada plates at a Mexican restaurant are usually $14 each! I can make a meal for my whole family for much less than that! Enjoy trying out this uber delicious enchiladas recipe!

Total Cost of this dish is approximately $10-$12, plus it feeds 6-8!

Ingredients

12 flour tortillas (I know it should be corn, but family doesn’t like those)

1 1/2 lb ground turkey or beef

Cumin

Chili Powder

1 8 oz jar tomatoes with chilis

8 oz cheddar cheese

2 4 oz cans mild enchilada sauce

Directions

Preheat oven to 350 degrees

In a large frying pan, brown the meat. Drain the tomatoes with chilis and add to the browned meat.

Add cumin and chili powder to taste. Drain and set aside

In a 13X9 baking dish, fill the flour tortillas with the browned meat. Roll and place opening on the bottom to make sure they remained closed.

Once done filling all the shells, cover all of the enchiladas with enchilada sauce.

Cover the entire pan with cheddar cheese.

Place in the oven until the cheese is melted and the sauce is slightly bubbly. Approximately 20-30 minutes.

Seafood Brochettes

I have been cooking a lot more lately, so I thought I would give myself a challenge and try a new dish that I hadn’t made before. I found this fabulous seafood brochette recipe from Le Creuset. It looks absolutely divine!

Le Creuset specializes in a great line of quality cookware. What I loved about their site is that I could not only drool over all the cookware I wanted to add to my kitchen, but I could also find fantastic recipes. That is where I got this recipe from.

I am by no means an expert cook, but even I was able to tackle this recipe. The combination of seafood is so delicately accented by the Hollandaise sauce. This was my first experience with the creamy, succulence that is Hollandaise. It was so divine I think I could’ve drank the whole thing.

Even though the sauce was easier than I thought to make, I did wish the language of the recipe was a little bit more beginner cook friendly. There were a couple terms, like “on the hob”, that I had no clue what it meant. Even with the newbie language barrier, I was still impressed with my dish!

If you are looking to adventure outside of your comfort zone, you have to try this recipe. If seafood isn’t your thing, then head over to the recipe section at Le Creuset and find many other fabulous dishes to try! They are neatly organized by cuisine, meal time, and even category. It’s very user friendly.

For those that want to try this recipe, this is what you need to make this delicious dish. It yields about four servings.

 

 

 

Ingredients

White wine hollandaise

½ cup dry white wine ( I chose a nice Pinot Grigio)
1 bay leaf
1 teaspoon peppercorns
3 egg yolks
1 ½ sticks butter
½ cup fish stock reduced to ¼ cup
Or ¼ cup double strength fish stock from a cube
Freshly squeezed lemon juice
Salt and pepper

Instructions:

To make the brochettes

Place the seafood onto a skewer adding one bay leaf per piece
Mix the olive oil, lemon juice and seasoning in a small bowl and brush onto the brochettes. Cover and let marinate in a cool place for 1 hour.

Hollandaise preparation

Pour the white wine, bay leaf and peppercorns into a small pan and reduce to about 2 tablespoons. Strain the liquid  and set aside.  Make sure to clean the pan.
Fill a medium saucepan to about a ¼ full with water, place it on a medium heat and bring to a gentle simmer. Place on a lid until and set aside until needed.
Heat the butter in the clean small pan until just melted. Set to one side.

To cook the brochettes

Turn the grill up to a medium heat. (You can place them directly on the grill or use a great grill pan too)
When the grill is ready, lightly brush with vegetable oil. Pat away any excess moisture from the brochettes using some paper towels and cook on the grill for 3-4 minutes without turning, once sealed and nicely bar marked, turn and cook the other side.
Place the cooked brochettes in a dish, cover and keep warm while making the hollandaise.

To make the Hollandaise

Whisk together the egg yolks and the white wine mixture in a large bowl.
Place the bowl over the just simmering water and whisk continuously and vigorously until thickened and the foam will make a trail.
Remove the bowl from the heated water and whisk in 2-3 tablespoons of the melted butter, return the bowl to the pan of hot water and whisk for 1 minute. Repeat this until all the butter has been incorporated. To prevent the outer edges cooking too quickly scrape the sides of the bowl as you whisk, this will keep all the sauce at the same temperature and prevent lumps. The end consistency should be like thick mayonnaise.
Add the reduced fish stock a little at a time whilst continually whisking over the water. Season to taste with a squeeze of lemon juice, salt and pepper.
Pour into a warmed well insulated sauce jug or warmed individual small dishes and serve immediately with the cooked brochettes.

Trust me, it sounds a lot more complicated than it is. Before trying this dish, make sure to read through all the instructions and have a good understanding of what you are supposed to do. Then enjoy! You can thank me later!

Once a week, we have a fun family night where we enjoy a movie, watch a sports game, play game boards. Everyone looks forward to this night and to the snacks I cook. Our favorite party snacks are chicken wings… Each week we try a different recipe but all the family loves this sweet and sticky variant: maple syrup chicken wings.  The maple syrup adds flavor and texture to the chicken wings that you cannot resist but eat them in few seconds.

Ingredients

24 chicken wings

1 cup maple syrup

¼ cup of olive oil

3 tablespoons of soy sauce

2 chopped garlic gloves

2 tablespoons chopped ginger

Make it

Preheat oven to 375 F

In a small bowl, mix all the ingredients except the chicken wings

Place the chicken wings in a large bowl. Pour the sauce and mix.

For better results, marinate for few hours in the fridge.

Place the chicken wings in a 13 inch baking dish. Cover with aluminum foil

Cook for 45 minutes or until  brown.

Penne Pasta Bake with Caesar Salad

Italian food for less than $5I love Italian food! It is absolutely yummy! The rich flavors tickle your taste buds, and the pasta fills your tummy without breaking the bank. This recipe is super easy, and you can feed a family of five for less than $5!

Here are the ingredients you need

Penne Pasta Bake with Caesar Salad Serves 6-8

Supplies

13X9 ceramic baking dish

strainer

can opener

Cheese Grater

Large cooking spoon

Ingredients

1 box of Penne Pasta (.50 cents)

1 can Tomato Sauce 16 oz (.75 cents)

1 bag shredded mozzarella ($1.67)

1/2 block cheddar (84 cents)

1 prepackaged salad (67 cents)

half a bag of caesar coupons (20 cents)

caesar salad dressing (10 cents)

oregano (10 cents)

italian seasoning (10 cents)

Total Cost $4.93 that’s 83 cents a serving when feeding six!

Instructions

Pre-heat the oven to 350 degrees

Put a large pot full of water on to boil. Once starts to have a rolling boil add penne pasta, and boil until done

While pasta is boiling, grate half a block of your favorite cheddar cheese. Set aside

On another burner, place tomato sauce in a sauce pan. Add Oregano and Italian seasoning to taste, leave on warm

After pasta is done boiling, strain and then place in 13X9 baking dish

Pour tomato sauce on top of pasta and mix until pasta is completely coated in sauce.

Sprinkle mozzarella and cheddar cheese on top of pasta until well coated. You can also add more seasoning on top if you like.

Place in the oven at 350 degrees for approximately 25-30 minutes until cheese is melted and bubbly.

For the salad simply mix the pre-made salad mix, croutons, and salad dressing in a large bowl.

When it’s all done, enjoy this deliciously easy dish. It makes more than enough for a family of five. We always have leftovers, and it’s even better heated up the next day!
