omelette recipesHaving a swiss and pancetta omelette for breakfast is a great way to make sure you won’t be hungry anytime soon. If you are anything like me, cereal doesn’t cut it. If I have a bowl of cereal I am hungry less than an hour later, but if I eat a breakfast that is chock full of protein I can make it until lunch!

When I was a kid, one of my favorite things that my mom used to make was ham and cheese omlettes. I remember this bright red omlette pan that she had, and probably still does. It made it so easy to make and flip the omlette. Sunday morning breakfasts were a tradition in our house, and it’s something that I have tried to continue in our house as well.

At least one morning a week, I try to cook the kids breakfast and we all sit down together to spend sometime together. It’s a great way to bond over some amazing food, plus it gets them to sit still at least once a week!

Swiss and Pancetta Omelette is born

Rather than plain old omlettes, we add pancetta to ours. (The kids think it makes the omlettes fancy) Recently I discovered the world of pancetta. Pancetta is an italian bacon. It is full of some amazing flavors and a little bit goes a long way. My local Trader Joe’s store sells cubed pancetta that is perfect to toss in this swiss and pancetta omlette. It’s super fast and simple, and makes a really favorful, filling breakfast option!

Normally when I make these once a week, and my eldest daughter and I split the omlette. Thow in a piece of toast and a glass of juice or piece of fruit for a great breakfast!

Ingredients

  • 3 eggs (beaten)
  • 2 T Pancetta
  • 1/4 cup shredded swiss cheese
  • Salt and pepper to taste
  • Olive oil (to grease pan)
  • parsley (garnish)

Instructions

  1. In a bowl, whisk together the salt, pepper, and eggs.
  2. Place 1 t of olive oil in pan and heat on medium heat until it coats pan.
  3. Add egg mixture and allow to cook until slightly bubbly.
  4. Add cheese and pancetta, then fold egg in half.
  5. Wait 30 seconds, and then flip to cook for an additional 30 seconds.
  6. Remove and serve hot. Garnish with parsley

Easy Pancake Recipes: Freezer Pancake Sticks!

Not many of us in the Crunchy household are morning people. That’s why I love making easy breakfast ideas, like these pancake recipes, for the morning that the kids can just grab themselves and get ready for homeschool in the morning.

This Christmas my in-laws sent us this really cool pancake and french toast stick maker. It’s about the most amazing kitchen appliance that I have ever gotten as a gift. It’s so loved that it’s right up there with my KitchenAid Stand mixer.

One of my kids favorite recipes to make with our pancake maker is our freezer pancake sticks. I make batches and batches of the sticks and then put them in a freezer safe bag. Then all the kids have to do is toss a few in the microwave to grab breakfast! The best part is that I can add different mix ins to each batch so we can have several different varieties in the freezer for the kids to choose from. (It also lets me make my allergy friendly pancakes for my youngest daughter)

French Toast Stick Maker

Easy Pancake Recipes: Freezer Pancake Sticks!

Ingredients

  • 1 1/2 Cups Flour
  • 1 Teaspoon Salt
  • 1 Tablespoon Sugar
  • 3 T Extra Virgin Olive Oil
  • 1 Large Egg (or egg substitute see below)
  • 1 1/4 Cup Milk (or milk substitute)
  • 3 1/2 Teaspoons Baking Powder
  • 2 Teaspoons Vanilla
  • Egg Substitute (mix all together before adding to main recipe)
  • 2 Tablespoons of Water
  • 1 Tablespoons of Oil
  • 1 Tablespoon of Baking Powder

Instructions

  1. In a large bowl, mix all of your dry ingredients together with a whisk.
  2. Add milk, egg, vanilla, and oil to dry mix
  3. Beat on low until all lumps are gone.
  4. Place a small amount of oil in cold pancake stick maker and coat, so they won't stick
  5. Allow to heat for just a few seconds, and then use enough batter to coat the bottom of the maker.
  6. Close.
  7. When sticks are golden brown on top, remove and allow to cool.
  8. Once cool place in a freezer bag, but lay bag down flat. Freeze one row of sticks, and then once frozen add another layer. (This prevents sticks from freezing together)
  9. When you are ready to eat, break off desired amount of sticks and place in microwave for 30 seconds.
  10. Enjoy!

Cinnamon roll waffles are an amazing way to spice up breakfast!  They are super easy to make, and they are absolutely amazing! All you need is your favorite cinnamon rolls, a waffle iron, and 5 minutes in the morning! My in-laws gave my husband and I this super cute Mickey Mouse Waffle iron for Christmas, so not only are our waffles delicious, but they are cute as well!

Cook Time: 5 minutes

Total Time: 10 minutes

Ingredients

  • Pillsbury Grands Cinnamon Rolls
  • Milk
  • Water
  • Vanilla

Instructions

  1. Spray your waffle iron, and let preheat
  2. Place a cinnamon roll onto the waffle iron, and let sit for 2-3 minutes (check often)
  3. Once it's browned it's done!
  4. To make frosting
  5. Take the frosting that comes with cinnamon rolls and place in the bowl.
  6. Add 1 T of Milk
  7. Add 1 t of Vanilla
  8. Stir to blend
  9. Add 1 additional T of milk at a time until you have a slightly runny consistency.

Homemade Pancake RecipesPancakes and waffles are a delicious and frugal way to feed your family! We even have them for dinner on occasion. My kids think “breakfast for dinner” is the neatest thing ever. To make these an even better treat, make them into fun shapes or use a shaped waffle iron. My inlaws gave us this great Mickey Mouse waffle iron for the holidays, and my kids can’t get enough of the Mickey Mouse waffles.

Next time you go to buy toaster waffles, try this instead. When you make a batch of waffles or pancakes make a double or triple batch. You can place the extras in freezer bags and they are ready to when you want a quick and easy breakfast and they are a LOT cheaper than buying Eggos!

This is my favorite recipe for pancakes and waffles. It’s super easy to make it from scratch and only costs pennies a serving.

Crunchy’s Old Fashioned Pancake and Waffles

Ingredients

1 1/2 cups all-purpose flour (89 cents)

3 1/2 t baking powder (5 cents)

1/2 t salt (1 cent)

1 T sugar (5 cents)

3 T butter melted (35 cents)

1 1/4 cups milk (6 cents)

1 egg  ( 8 cents)

2 t vanilla (10 cents)

Total Cost: $1.59 for a family of 5

 

Directions

In a large bowl, mix together dry ingredients and then blend together with a whisk.

Next, add all of the rest of the ingredients and mix on low until batter is a uniform consistency.

Heat a large skillet or waffle iron, spray with nonstick spray if necessary.

Use 1/4 cup of batter per pancake. Flip when brown on each side.

Makes approximately 10 pancakes or 5 waffles

Banana Chocolate Chip MuffinsI love to bake!! Something about being in the kitchen that brings me back to Sunday afternoons in the kitchen with my Mom! I thought I would share one of my favorite recipes that I make, Banana Chocolate Chip Muffins!!

You will need:

2-3 mashed ripe bananas
1 large egg
1 teaspoon vanilla
1/2 cup melted butter
1/4 cup milk
1 1/2 cups flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk chocolate chips

Preheat oven to 350. In a mixing bowl, mix melted butter into the mashed bananas. Add egg, vanilla and milk to mixture. In a seperate bowl mix the flour, sugar, baking powder and salt. Pour dry ingredients into banana mixture and stir until blended. Add chips into batter.

Banana Chocolate Chip MuffinsScoop your batter into the holders and bake until golden brown. Bake for 20-25 minutes. I use a toothpick to check them while cooking.
