I love to bake!! Something about being in the kitchen that brings me back to Sunday afternoons in the kitchen with my Mom! I thought I would share one of my favorite recipes that I make, Banana Chocolate Chip Muffins!!
You will need:
2-3 mashed ripe bananas
1 large egg
1 teaspoon vanilla
1/2 cup melted butter
1/4 cup milk
1 1/2 cups flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk chocolate chips
Preheat oven to 350. In a mixing bowl, mix melted butter into the mashed bananas. Add egg, vanilla and milk to mixture. In a seperate bowl mix the flour, sugar, baking powder and salt. Pour dry ingredients into banana mixture and stir until blended. Add chips into batter.
Scoop your batter into the holders and bake until golden brown. Bake for 20-25 minutes. I use a toothpick to check them while cooking.
Remove from oven and place on cooling rack! Then enjoy!!

These would make a great after school snack for my grandchildren. I love the added treat of chocolate chips too.
Do you think it would be ok to use semi-sweet chips? That’s all I have. I have some bananas that need to go and would love to try these out.
Arrica, all I ever use is semi-sweet, so yep they taste most excellent with semi-sweet chips too!
