Easter is just around the corner, and we could all use some inspiration with these amazingly gorgeous Easter cakes! My children and I love to bake during Easter time to welcome the longer days and warmer weather. We usually make some great birds nest cupcakes to get in the mood for spring plantings, and of course the coming of the Easter bunny!
At our home, we have a tradition of making an easter bunny cake each year. We use a vanilla cake mix with cream cheese frosting, and then use coconut to make the bunny’s fur. The kids love changing up how we make the face. Sometimes we use Cadbury eggs. Other times we use jelly beans and raisins. I really just let the kids have their way with it. It’s not meant to be pretty, but they really look forward to making our bunny cake every year. It was a tradition I started with the girls when they were really little. You would think that now that they are teenagers they wouldn’t want to do it anymore, but you would be surprised how much they still love this tradition!
