The last few months have really been a challenge. Not being allowed to get up, let alone stand and cook, has really limited me to what I can eat when I am home alone. A girl can only eat so many peanut butter and jelly sandwiches before she loses it.
Hearing my despair, Mr Crunchy took me to Sam’s Club to see what we could find that might be a little easier for me to fix and that didn’t taste like cardboard. (or was full of tons of junky stuff)
While we were looking around, I found that Lean Cuisine had a new line of Asian inspired dishes. They looked really yummy! I had a recipe for homemade pot stickers that I love to make too which would go really well with them. Lean Cuisines you just pop in the microwave, and my pot stickers you can freeze and cook them when you want to. Ta da, instant meal in less than 10 minutes! Mr. Crunchy thought I was a genius (though he won’t admit that in public).
Before I tell you all the juicy details about the Lean Cuisine dishes, check out my awesome pot stickers recipe. I love this recipe because you can make them up and then freeze them. When you are ready to eat them, just cook them in a pan with a little water in it and they are done!
Now onto the good part. The Lean Cuisine Asian flavor packages came with several different flavors. My absolute favorite was the Sesame Chicken. It was an amazing combination with the pot stickers. It was a great, easily prepared meal that even Mr. Crunchy liked. (He’s also snarfing my food). They also had ginger garlic stir fry with chicken, and teryiaki chicken stir fry. Both are going taste amazing with my chicken ginger pot stickers!
