So to pull a little bit from my roots, I thought I would invite a long time family friend to help share some good ole Southern Frugal cooking! Thanks so much to Sissy for sharing this fabulous Savannah Red Rice and Sausage recipe! Makes me think of home! Can’t wait to make it for the Crunchy kids!

Savannah Red Rice and Sausage

 Ingredients

3 Tbsp. Extra Virgin olive oil or Canola oil

1-      13 oz. Hillshire Farms beef or pork sausage link. Cut into ½ inch slices or cubed.

1 Large chopped onion

3 cups Jasmine or long grain rice. I like the Jasmine because it doesn’t get gummy.

4 cups chicken stock or water. Or you can also use 3 or 4 bouillon cubes or     about a tbsp. of chicken base with

the water or just use plain water.

1 can petite diced tomatoes drained

1-     8 oz. can tomato sauce

6 Tbsp. tomato paste

Salt and pepper to taste

Directions 

You will need to start with a large 11 to 12 inch frying pan with a lid.

Heat pan on medium high until hot add in oil. Then add sausage and cook on both sides until lightly brown. Then take out and set aside. Put onion in pan and cook until translucent. Then add raw rice and stirring constantly until the rice turns a whiter color (this step helps keep rice from getting gummy). Do not brown. Then add in tomato paste and work throughout the rice. Add in Water or stock and bouillon cubes or base,tomatoes, and tomato sauce. Salt and pepper and stir until it comes to a boil. Cover and set to low heat (2 on electric) cook for 25 minutes and DO NOT open lid! After 25 minutes uncover and fluff with a fork!

In my region this cost about a dollar a serving! Will serve about 6 adults

Crouton RecipesI am a crouton lover down to my very core. There is nothing better than that crispy, garlicy goodness atop a beautiful salad. It just makes it complete. Unfortunately, my youngest daughter has a lot of allergies and most croutons have some sort of milk in them. She could eat her weight in croutons, but can’t normally have them because of the milk. Well the other day, I was staring at the last few peices of bread in about 4 bags of bread. (Kids are great aren’t they) An idea came to me. Why not try and make my own croutons? It should be simple right. (Let’s hope it doesn’t turn into another tortilla chip debacle. Let’s just say there was a fire extinguisher involved)

Off to the kitchen I went, grabbing my crusty bread and  brain filled with ideas. Wouldn’t you know, I actually was able to make my own croutons. Plus it’s SO much cheaper than buying them. I can even make them flavored how I want them flavored. This particular batch I made for Caesar salads so they did have cheese on them, but then I made a plain version for my daughter. She just loved them.

This recipe is super simple, and a lot more frugal than buying the store varieties.

Ingredients

5-7 pieces of stale wheat bread

3 T grated parmesan cheese

1 T olive oil

2 T garlic powder (to taste)

1 T Italian seasoning

Directions

Preheat your oven to 350 degrees

Set your bread out on the counter until it has a nice crust to it

Cut the bread into 1 inch squares. (bigger if you want bigger croutons)

In a ziploc bag pour the olive oil, parmesan, garlic powder and Italian seasoning

Place the bread in the bag, and shake, shake, shake (you may have to scrape the sides with some of the bread to get a good coating)

Place the bread on a cookie sheet, and then place in the oven for 15 minutes or until golden brownCrouton Recipes

Your croutons are ready to eat! Store them in an air tight container and enjoy!

Homemade Pancake RecipesPancakes and waffles are a delicious and frugal way to feed your family! We even have them for dinner on occasion. My kids think “breakfast for dinner” is the neatest thing ever. To make these an even better treat, make them into fun shapes or use a shaped waffle iron. My inlaws gave us this great Mickey Mouse waffle iron for the holidays, and my kids can’t get enough of the Mickey Mouse waffles.

Next time you go to buy toaster waffles, try this instead. When you make a batch of waffles or pancakes make a double or triple batch. You can place the extras in freezer bags and they are ready to when you want a quick and easy breakfast and they are a LOT cheaper than buying Eggos!

This is my favorite recipe for pancakes and waffles. It’s super easy to make it from scratch and only costs pennies a serving.

Crunchy’s Old Fashioned Pancake and Waffles

Ingredients

1 1/2 cups all-purpose flour (89 cents)

3 1/2 t baking powder (5 cents)

1/2 t salt (1 cent)

1 T sugar (5 cents)

3 T butter melted (35 cents)

1 1/4 cups milk (6 cents)

1 egg  ( 8 cents)

2 t vanilla (10 cents)

Total Cost: $1.59 for a family of 5

 

Directions

In a large bowl, mix together dry ingredients and then blend together with a whisk.

Next, add all of the rest of the ingredients and mix on low until batter is a uniform consistency.

Heat a large skillet or waffle iron, spray with nonstick spray if necessary.

Use 1/4 cup of batter per pancake. Flip when brown on each side.

Makes approximately 10 pancakes or 5 waffles

Chocolate Covered Strawberries

Every year, I have always received chocolate covered strawberries for Valentine’s Day. The cost of these tasty treats has steadily rised and they are expensive!! This year, I thought I would try to make these tasty treats for myself. I decided to make them as gifts for my mother and mother-in-law as well. The best part is I made all of these for under $20 total!!

I went to the Dollar Store and grabbed heart vases, bamboo chopsticks, styrofoam and red vase fillers. I used Nestle Milk Chocolate Morsels as my chocolate of choice.

Chocolate Covered StrawberriesI melted the chocolate morsels first. I did this by placing a saucepan over a pot of water on low heat – constantly stirring. Using toothpicks make a stand for the strawberries, so after you dip them in the chocolate you can place them on the was paper without laying the chocolate side down.

 

 

 

 

Chocolate Covered Strawberries

After you dip and cover the strawberry in chocolate, place on a cookie sheet covered in wax paper. Place your strawberries in the fridge to cool and let the chocolate harden before assembling your fruit arrangement.

 

 

 

 

 

Chocolate Covered Strawberries After letting the strawberries sit, place the strawberries on the bamboo chopsticks. Use styrofoam in the vase to secure the bamboo chopsticks in place. The heart in front is an apple carved in a heart covered in chocolate. (Not needed but an extra touch of love!)

This was my first time making my own chocolate covered fruit arrangement. I learned a few things that I would have done differently .

I would use colored Styrofoam, color it yourself or don’t use a clear vase. I also was going to wrap a red ribbon around the bottom of the vase in order to cover the showing Styrofoam.

Next time, I plan to attempt using white chocolate to decorate the strawberries too! Can you imagine how awesome that decoration would look?

Once a week, we have a fun family night where we enjoy a movie, watch a sports game, play game boards. Everyone looks forward to this night and to the snacks I cook. Our favorite party snacks are chicken wings… Each week we try a different recipe but all the family loves this sweet and sticky variant: maple syrup chicken wings.  The maple syrup adds flavor and texture to the chicken wings that you cannot resist but eat them in few seconds.

Ingredients

24 chicken wings

1 cup maple syrup

¼ cup of olive oil

3 tablespoons of soy sauce

2 chopped garlic gloves

2 tablespoons chopped ginger

Make it

Preheat oven to 375 F

In a small bowl, mix all the ingredients except the chicken wings

Place the chicken wings in a large bowl. Pour the sauce and mix.

For better results, marinate for few hours in the fridge.

Place the chicken wings in a 13 inch baking dish. Cover with aluminum foil

Cook for 45 minutes or until  brown.

Don’t these blueberry crumble muffins make your mouth water?? With Spring right around the corner, I thought I would get in the mood by using one of my favorite fruits; blueberries! I love the color of blueberries. I love their sweet yet tart taste as they burst in your mouth. My absolute favorite way to savor these blue little beauties is in blueberry muffins. Blueberry muffins are a delicious and easy way to enjoy these spunky berries.

I added a little twist on the traditional blueberry muffin and added some crumble topping on the top for a little extra sweetness and texture. I have to say they are aboslutely fabulous muffins! Perfect for breakfast or just a snack. Enjoy making your own!

 

Ingredients

Muffin

  • 1 cup sugar
  • 1/4 cup butter, room temperature
  • 2 eggs
  • 2/3 cups milk
  • 1 t vanilla extract
  • 2 cups all-purpose flour
  • 2 t baking powder
  • 1/4 t salt
  • 1 dry pint blueberries

Topping

  • 1/3 cup sugar
  • 1/4 cup light brown sugar
  • 1/2 cup all purpose flour
  • 1 1/2 t cinnamon
  • 1/4 cup butter, room temperature

 

Directions

 

  • Preheat your oven to 350 degrees
  • Line 12 cup muffin pan (or spray with nonstick spray)
  • In a large bowl, use an electric or stand mixer to cream the sugar and butter
  • Beat in the eggs, milk and vanilla
  • In another bowl, mixture the dry ingredients of flour, baking powder, salt and blend
  • Add the dry ingredients to the wet mixture, just until mixed
  • Turn mixer off, add blueberries gently fold blueberries in the mix so not to crush them
  • Fill each muffin 3/4 full, then sprinkle with crumble topping

 

 

Topping Directions

  • Put sugar, light brown sugar, flour, and cinnamon in a bowl and mix
  • Use your fingers to work the butter into the dry mixture. Keep working until most of the dry is worked into the butter
  • Add to the muffins, then baked for 20 to 25 minutes until toothpick comes out clean

Banana Chocolate Chip MuffinsI love to bake!! Something about being in the kitchen that brings me back to Sunday afternoons in the kitchen with my Mom! I thought I would share one of my favorite recipes that I make, Banana Chocolate Chip Muffins!!

You will need:

2-3 mashed ripe bananas
1 large egg
1 teaspoon vanilla
1/2 cup melted butter
1/4 cup milk
1 1/2 cups flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk chocolate chips

Preheat oven to 350. In a mixing bowl, mix melted butter into the mashed bananas. Add egg, vanilla and milk to mixture. In a seperate bowl mix the flour, sugar, baking powder and salt. Pour dry ingredients into banana mixture and stir until blended. Add chips into batter.

Banana Chocolate Chip MuffinsScoop your batter into the holders and bake until golden brown. Bake for 20-25 minutes. I use a toothpick to check them while cooking.

 

 

 

 

Banana Chocolate Chip MuffinsRemove from oven and place on cooling rack! Then enjoy!!

Homemade Cinnamon Pecan Rolls

Cinnamon Roll Recipes My family loves Cinnamon Rolls, but buying the premade ones was getting kind of expensive, so I thought about dabbling my hand at making my own! It’s actually really easy, especially if you have a bread machine. This recipe makes about 10 cinnamon rolls, so you can make breakfast for your family of 5 for about Here’s how to make amazingly delicious Cinnamon Pecan Rolls with cream cheese frosting.

Ingredients
Dough Ingredients (.50 cents total)
1/4 cup milk (80-90 degrees)
1/4 cup +2 Tbsp water (80-90 degrees)
1 large egg, room temperature
1/4 cup sugar
2 tbsp. unsalted butter cut in pieces
1/2 tsp salt
2 1/2 cups bread machine or bread flour
2 1/4 tsp active dry yeast

Topping Ingredients
2 cups pecans crushed ($1.00)
2 T cinnamon
1/2-1 cup sugar (to taste)
2 T melted butter

Icing Ingredients ($1.50 total cost)
1 stick unsalted butter softened (room temperature)
1 8 oz package of Philadephia Cream cheese (room temperature)
2-3 cups powdered sugar

Total overall cost: $3.00 (versus $5-6 for Pillsbury brands)

Directions:

Place ingredients for the dough in a bread maker IN THE ORDER listed. Choose the dough only cycle on your bread maker. (usually takes 1 1/2 hours)
While that is working, use a nut crusher to finely crush the pecans. Then mix the cinnamon, sugar, and pecans together in a small bowl

Next, make your cream cheese frosting.
To do this, place the butter and cream cheese in a mixer and mix until combined and light and fluffy. Once combined, add confectioners sugar 1/2 cup at a time until the frosting is the sweetness you like.

Once the dough is done, flour a large flat surface and rolling pin. Roll the dough out until is about 13X9. Melt 2 Tbsp of butter and then brush on the dough.
Take the cinnamon mixture and add all across the dough.
Cinnamon Rolls RecipeThen very slowly roll the dough like a log.
Once it’s completely rolled, cut 2 inch slices off of the log and place on a greased cookie sheet.
Next, place the sliced rolls in a warm place and allow to rise for at least 45 minutes, I usually place them in the oven and allow to rise over night.
When they have risen, place in a preheated oven (375 degrees) and cook until golden brown. Around 20 minutes.
Top with the cream cheese frosting, and they are ready to serve!

Chocolate Chip Banana Bread Crumble

Banana Bread RecipeThere is no other way better to used over ripened bananas than banana bread! My family can never get enough of the stuff. This time I made my banana bread, I decided to add a little Crunchy twist to the good old family favorite! I added chocolate chips and light brown sugar topping that gave this fabulous bread a succulent crumbly, sweet topping! It was fabulous.  The best part is it’s frugal, and super easy to make! To make this recipe even more frugal make sure to check the clearance section in your produce department. They have over ripened bananas at mine all the time for half the price of regular bananas!

Ingredients

3 ripened bananas

1 T milk

2 large eggs

1 stick unsalted sweet cream butter (room temperature)

1-2 Tbsp Cinnamon (to taste)

1 cup granulated sugar

2 tsp Vanilla

1/2 cup mini chocolate chips

5 T light brown sugar

3 cups flour

1 t baking soda

1 t salt

1 t baking powder

Directions

Preheat oven to 350 and grease a loaf pan

In mixer blend butter and sugar until light and fluffy

Add one egg at a time to butter/sugar mixture, and then blend until well blended (will be lumpy)

In a small bowl place the bananas, milk, vanilla, and cinnamon. Mash with a fork

In a medium bowl mix the flour, salt, baking soda, and baking powder.

Mix banana mixture and butter mixture until blended. (I like to leave slighltly lumpy so you have warm banana chunks in your bread)

A little bit at a time add the flour mixture to the wet mixture. Blend only until all the flour is moistened.

Pour into a greased loaf pan. Top with light brown sugar and chocolate chips.

Bake for approximately 1 hr 10 min. to 1 hr 20 minutes until toothpick comes out clean after placed in center of the loaf.

Allow to cool 10 minutes before removing from pan and serving. Enjoy!

Homemade Marinara Sauce Recipe

I have to say that my family will literally eat their weight in pasta sauce. Having pasta nights are a great way to feed your family for very little money. Our favorite right now is the Penne Pasta Bake that I make. Yummo. Well I thought, what the heck let’s try making our own marinara sauce. This homemade marinara sauce recipe is super easy to do. Your total prep time is only about 15  minutes, and it’s great for canning or freezing! Plus it breaks down to about .35 cents a jar!

Ingredients
2 28 oz cans whole peeled plum tomatoes

1 28 oz can crushed tomatoes

1 Tbsp Worstershire Sauce

1 tsp crushed red pepper flakes

Fresh Ground pepper (to taste)

2 heaping T Italian seasoning

4 cloves garlic crushed or pressed

pinch of salt

2 onions (optional)

1 cup mushrooms (optional)

Directions

Start by opening the cans of tomatoes and emptying them in a crockpot

Chop your mushrooms, onions, and garlic then place in the crockpot

Add Italian Seasoning, Pepper, Salt, Red Pepper Flakes, and Worchestire Sauce. Then stir until well blended

Place the crock pot on low for 6-8 hours until thickened. Then turn crock pot off and let cool over night.

After the sauce is cooled, get a Pyrex measuring glass and place a quart size freezer bag in it.

Fill freezer bag with 1-2 cups of sauce (as needed to feed your family)

Get out all the extra air, seal tight, and then lay flat.

Place bags in your freezer.

They are ready to use next time you have pasta night! Enjoy!

Chocolate Covered Pretzel Rods

Chocolate Covered Pretzel Rods

I love everything chocolate! I am especially fond of chocolate covered pretzels. This is a really easy to make delicious treat that you can serve for Chocolate Covered Pretzel Rodssnack or even fancy it up to serve at a party.

Ingredients and Supplies
Salted Pretzel Rods ($1)
2 bars Ghiradelli Milk Baking Chocolate (4 oz.)(.20 cents got on clearance!)
2 bars Ghiradelli Semi-Dark baking chocolate (4 oz.) (.20 cents)
Coconut (.50 cents)
Crushed pecans ($2)
Double boiler (I use a regular pot and a metal mixing box)
Wax paper

Total Cost $3.90 (makes 10-15)

Directions
First, add water to your double boiler and get it boiling.
Add the chocolate and stir until it’s completely melted. (When you lift your spoon out of the chocolate it should be a thin drizzle)

Constantly stir the chocolate, because you do not want to burn the chocolate.

While the chocolate is melting, lay out enough wax paper to be able to place all of your finished chocolate rods on.
If you wish to add topping to your rods, get out plates and put enough of your topping on the place that you can easily roll the rod in the topping.
Once your chocolate is done melting, remove it from the heat.
Dip your pretzel rods into the chocolate about 1/2-3/4 of the way. Use a spoon to help cover the whole rod, as the chocolate probably won’t be deep enough to actually dip it in.
After you have dipped the rod, roll it gently in the topping of choice. (Ie. sprinkles, coconut, crushed cookies etc.)
Once rolled, place gently on the wax paper to dry. (You can speed up the drying process by placing the rods on a baking sheet and in a freezer for 5-10 minutes)
Let them dry until the chocolate is completely hardened.

Now you are ready to serve! Enjoy!

Penne Pasta Bake with Caesar Salad

Italian food for less than $5I love Italian food! It is absolutely yummy! The rich flavors tickle your taste buds, and the pasta fills your tummy without breaking the bank. This recipe is super easy, and you can feed a family of five for less than $5!

Here are the ingredients you need

Penne Pasta Bake with Caesar Salad Serves 6-8

Supplies

13X9 ceramic baking dish

strainer

can opener

Cheese Grater

Large cooking spoon

Ingredients

1 box of Penne Pasta (.50 cents)

1 can Tomato Sauce 16 oz (.75 cents)

1 bag shredded mozzarella ($1.67)

1/2 block cheddar (84 cents)

1 prepackaged salad (67 cents)

half a bag of caesar coupons (20 cents)

caesar salad dressing (10 cents)

oregano (10 cents)

italian seasoning (10 cents)

Total Cost $4.93 that’s 83 cents a serving when feeding six!

Instructions

Pre-heat the oven to 350 degrees

Put a large pot full of water on to boil. Once starts to have a rolling boil add penne pasta, and boil until done

While pasta is boiling, grate half a block of your favorite cheddar cheese. Set aside

On another burner, place tomato sauce in a sauce pan. Add Oregano and Italian seasoning to taste, leave on warm

After pasta is done boiling, strain and then place in 13X9 baking dish

Pour tomato sauce on top of pasta and mix until pasta is completely coated in sauce.

Sprinkle mozzarella and cheddar cheese on top of pasta until well coated. You can also add more seasoning on top if you like.

Place in the oven at 350 degrees for approximately 25-30 minutes until cheese is melted and bubbly.

For the salad simply mix the pre-made salad mix, croutons, and salad dressing in a large bowl.

When it’s all done, enjoy this deliciously easy dish. It makes more than enough for a family of five. We always have leftovers, and it’s even better heated up the next day!

Lemon Meringue Pie Recipe

lemon meringue pieThis Lemon Meringue Pie recipe is one of my absolute favorite recipes of all time. I would beg my mom to make it every holiday when I was a kid. I don’t what it was about it’s creamy, lemony goodness that drove me to crave it all year long! I have tweaked the recipe a little bit to make it my own. (I tend to be heavier handed on the lemon juice), but it’s super easy and absolutely delicious!

 

 

 

 

 

Ingredients

  • One ready made graham cracker pie crust
  • 3 eggs (separated)
  • 1 cup sugar
  • 1/8 t cream of tartar
  • 1/8 t salt
  • 1 can non-fat sweetened condensed milk
  • 1 cup lemon juice

Directions

Preheat oven to 350 degrees

Separate the eggs. Put yolks in one bowl and egg whites in another. Set egg whites aside (let set until room temperature)

To the egg yolks, add the lemon juice and sweetened condensed milk. Mix until completely blended

Pour lemon mixture into the pre-made pie crust

After the egg whites are room temperature, beat until forthy.

Once frothy, add salt and cream of tartar until soft peaks form

Adding 1T at a time, add sugar and beating a lot between each additional Tablespoon. Beat until stiff peaks form (can take up to 10 mins)

Once stiff peaks form, use a spatula to place meringue on top of lemon mixture. Make sure to seal (bring to edges) the pie with the meringue.

Place pie on a cookie sheet and place in the oven at 350 for approximately 5-10 minutes or until the meringue is golden brown.

Set on the counter until cooled, and then refigerated for 1-2 hours or overnight.

 

Nut-Free, Dairy-Free Meringue Cookies

Meringue CookiesMeringue Cookies are my daughter’s favorite cookies for the holidays! I have to say I grew up loving them to, and I didnt’ have to adapt them too much to make them a great allergen free treat!

Ingredients:
4 egg whites, room temperature
1/4 t salt
1/4 t cream of tartar
1/4 c. sugar
2 c. Enjoy Life chocolate chips
2 t vanilla

Optional
1t peppermint extract
2 c. pecans crushed

Preheat the oven to 250 degrees. Beat the egg whites in a small bowl until foamy.Enjoy Life Chocolate Chips
MeringueAdd the salt and cream of tartar, and continue beating until soft peaks form
Add the vanilla
Then add the sugar one T at a time, and beating well between each additional T of sugar
When meringues form stiff peaks you are done mixing (they should keep their shape after you lift the beater out)
Fold in ingredients of your choice. I added 2 cups Enjoy Life Chocolate chips

Drop 1 rounded Tablespoon size on a greased cookie sheet at least 1-2 inches apart. Bake 30-40 minutes until they are slightly cracked at the top!

Enjoy!

Italian Bread with Oregano Recipe

I have a great relationship with my bread maker because it lets me make lots of yummy breads, that I normally would spend $4 bucks a loaf on. This recipe is my favorite to make when I make spaghetti, but it will go well with almost any Italian dish! Plus it’s super easy to make!

Ingredients

  • Water (80-90 degrees) 1 1/2 cups
  • Unsalted butter or margarine 3 T
  • Sugar 1 T
  • Dry Skim Milk Powder 3 T
  • Salt 1 1/4t
  • Bread Flour 4 cups
  • Bread Machine Yeast 1 1/2 t
  • 1-2 T of oregano to taste
Instructions
Yields a 2lb loaf
Make sure to add the ingredients into your bread machine in the order listed, last one added being the Bread Machine Yeast.
I use a themometer to measure the temperature of the water because water too hot will kill the yeast and your bread won’t rise.
As the bread machine is mixing, I start adding the oregano so it’s mixed throughout the loaf.
I also watch to make sure that the loaf is mixing completely. If it’s not picking up all the flour, add more water 1T at a time.
If it’s sticking to the sides sprinkle some more flour on it.
You can add more or less oregano to get that rich flavor that you want. I tend to be a little heavy handed on the oregano because I love it’s zesty flavor!
Make sure to leave your bread machine undisturbed while it bakes, so your bread won’t fall.
Once it’s done, pull it out and enjoy!

Having a daughter with severe food allergies, I have to get creative with how I feed her. It is really hard to find ready made things that she can eat. I love making these pumpkin cupcakes for her so I know exactly what is in them!

Ingredients:

2 2/3 cup flour

2 tsp baking soda

2 tsp baking powder

3 tsp ground cinnamon

1/4 + 1/8 t ground nutmeg (I like the extra 1/8 tsp for a little extra zing)

1/4 tsp ground cloves

15 oz pumpkin puree

1 cup light brown sugar

1 cup sugar

1 cup olive oil or canola oil

4 eggs

Directions:

Preheat the oven to 350 degrees.

Mix the flour, baking powder, cinnamon, baking soda, cloves, nutmeg,  and salt together in one bowl. Whisk together until blended. Set aside

In a mixing bowl, put the pumpkin puree, sugar, oil, and light brown sugar together. Mix until smooth. Then beat one egg at a time into the mixture  until it has a uniform consistency.

1/4 cup at a time at the flour mixture to the pumpkin puree mixture. Make sure the two are completely blended until you get a consistent looking batter.

Spray muffin pan, and fill each up about 3/4 of the way full. I love making mini cupcakes too! This recipe makes about 30 cupcakes or 60 mini cupcakes.

Place in oven for 18-20 minutes for regular cupcakes. Let cool before frosting, and enjoy!

 

This recipe is nut-free and dairy free! Great for those with allergies.

 

Easy Crescent Pizza Pockets

You can ask my husband, I am not the cook in the house so if I am going to cook it needs to be fast and simple! I came up with the recipe when I had planned mini pan pizzas for lunch, but when I opened the canned dough I had bought it was bad. So I had to improvise, but I managed to feed my family for less than .30 cents/serving!

Makes 8 pizza pockets

Ingredients:

2 cans Pillsbury Crescent rolls

Spaghetti sauce

Grated cheese

Pizza toppings of choice

Garlic powder and italian seasonings (optional)

 

How to make these delicious little lunches:

Unroll one can of Crescent rolls. You should have 4 sheets of two.

Pizza Pockets

Take two of the triangles and press them together to form a rectangle

Spread about 1 Tbsp of spaghetti sauce in the middle of each crescent rectangle

Place about 1/4 cup of cheese and toppings in the middle

Fold over the cresent rolls to form a pocket.

Press the edges down with a fork to make sure it is sealed.

Sprinkle garlic powder and italian seasoning on top for extra flavor (optional)

Place in oven according to crescent roll package instructions

Warm up extra spaghetti sauce for a great dipping sauce

Enjoy. These are easy and a really frugal meal idea!

Homemade Chunky Applesauce Recipe

I love applesauce, and my kids love the chunky variety so I figured I would give it a whirl. It’s super simple to make, healthier, and in the long run is more frugal than buying even the generic brand at the store! Applesauce makes a great snack, a slightly sweet breakfast food, or even a healthy dessert! It can be a dieter’s best friend, too, especially if you add a dash of Sensa before eating.


Before you get started it is always a good idea to read up so you are doing it properly. Here is a great book about all the proper times to heat and preparations for canning. I grabbed this book, just for this post for free on Amazon thanks to Swagbucks!


First off, the amount this applesauce recipe yields will vary based on apple size, so if you have more just it eat warm YUMMY!
Ingredients
1/2 Bushel of your favorite apple we use 1/2 Jonathan and Cortland Apples (Check Pick Your Own to find out which apples are best for saucing)
Water or apple juice depending on your tastes
Tools:
Water Bath Canning Pot
Jar Grabbers
Canning Jars and Lids
Apple Peeler and corer
Large Stock pot
Potato Smasher
Cinnamon (optional)
FunnelMake sure to steralize your lids and jars before you start cooking. You can sterilize your jars by placing them in your dishwasher. Put lids and rings in a sauce pot and boil for 20 minutes covered.
1. Gather your apples. Make sure you wash them!
2. Peel and core your washed apples and place in large stock pot
3. Add about 1 inch of water or apple juice in the bottom of the pot. If you add too much it’s not a huge deal, you can just boil it off later :)

4. Cover the apples and turn up high for about 5 minutes. It is a good idea every now and then to stir the apples. Apple Juice has high sugar content and burns quickly so if you don’t stir and check them it can burn to the bottom.

5. After it’s been boiling for a little bit, turn it down to a medium heat. Continue to stir the apples until you notice they are soft.

6. Now here’s the fun part, and make sure to get the kids involved. Grab a mashed potato smasher and start smashing. It’s a lot of fun! Mash the apples up until its the consistency you want. You can make smooth or chunky this way.


7. If you want, add cinnamon to taste! I usually alternate between making regular applesauce and cinnamon applesauce!
8. After you are done having your fun, it’s time to can. Put your funnel into your jar. Fill up until about 1/2 inch below the top of the jar. Tap jar oncounter to make sure you get all air bubbles out.
9. Grab your magnetic lid grabber and place the lid and ring tightly over the jar. Set aside
10. Fill all your jars.
11.After done filling, make sure to put on your water canner.
12.Fill your pot with water and place jars in the water. Place cover on the pot. If you are doing pint
size jars boil for about 20 minutes. Place enough water in the pot to cover the top of the jars.
13. After your done boiling, use your jar grabber to remove the jars and set them to cool. It is VERY important to not bump or mess with the jars. Let them set for AT Least 24 hours to settle.If you are lucky enough to have a you pick apple orchard around you, this is the BEST way to make sure you have quality apples. At my local orchard, I bought 19 lbs of apples for only $13 so less than $1/lb!I try to keep the equipment needs low, to offset the cost of the sauce. You can find jars and lids at garage sales and thrift stores. The important thing to know is you really don’t want to use used jar lids. These lids have a special seal they form when used to keep the food shelf stable.  Lids are super cheap to replace and can also be found at thrift shops at times. Just make sure they aren’t used.At my local store applesauce is $2 a jar. This way I can make it about .50 cents a jar, plus it’s a great tradition to start with the family and it’s SUPER easy!
