Dadgum Good Garlic and Herb Deep Fried Turkey

Being from the South, there is always a little bit of my heart, err stomach, that loves something deep fried.

This year Mr Crunchy and I thought we would do a trial run and try a deep fried turkey recipe. We have never done it before, but I have watched enough Spike TV to know that unless you have the Fire Department on speed dial that you never fry a frozen bird. (even if you are frying WAAYY out back)

With Thanksgiving coming up, what could be better than a deliciously succulent deep fried turkey recipe. Frying your turkey isn’t the healthiest option, but it is the most amazing turkey that I have ever had! The skin is perfectly cripsy, and the meat lick it off your chin juicy!

If you are looking for a deep fried turkey recipe, you have to try this garlic and herb deep fried turkey recipe from “Dagum That’s Good, Too!” by John McLemore! This recipe is the best turkey I have ever had! Here’s what you have to do to make your bird hit of Thanksgiving this year!

Ingredients

1 fresh or frozen turkey (1o to 14 pounds) Remember frozen turkey plus fryer equals your house becomes a flambe!

2 gallons cooking oil, preferably peanut oil

1 (16 oz) bottle Butterball Garlic and Herb Turkey Marinade or your favorite brand

Butterball Garlic and Herb Turkey Seasoning or your favorite brand.

Directions

THAW TURKEY.

Pat turkey completely dry on outside and inside of cavity with paper towels.

Using a marinade injection syringe, inject 1/2 cup marinade in each breast.

Inject 1/4 cup marinade into each leg and thigh.

Sprinkle turkey generously w/ turkey seasoning, completely coating inside and out.

Place turkey, breast side up in fryer basket. Slowly lower basket into hot oil. Fry turkey 3 to 4 minutes per pound. Lift the basket from the hot oil slowly. Insert the meat themometer. When it reads 165 degrees, the bird is done.

Allow the turkey to rest and drain in the fryer basket for 10 minutes before carving.

It’s football season, and that means it’s time to bring on the munchies! My husband and I LOVE watching the games on the big screen and enjoying some of our favorite football snacks! I recently found this great recipe. It’s a BBQ Bacon Party spread. It looks amazing! We are going to try it this weekend, with our favorite Triscuit flavors!

I am currently kicking my husband’s butt in our fantasy football league, so maybe making this yummy recipe for snack might just make losing a little bit sweeter pill to swallow! Here’s all you need to make this fantastic dip. It’s sure to be a hit at your next football party!

 

Football Party Recipes

BBQ-Bacon Party Spread

 

Prep time: 15 min

Total time: 15 min

Servings: 35 servings, 2 Tbsp. spread and 6 crackers each

 

What you need:

  • 16 oz. Neufchatel Cheese, softened
  • ½ cup Barbecue Sauce
  • 2.8 oz. Bacon Pieces
  • 1 small tomato, chopped
  • ½ cup chopped green peppers
  • 2 green onions, sliced
  • 1-1/2 cups Shredded Cheddar Cheese
  • TRISCUIT Crackers

 

Make it:

SPREAD Neufchatel onto large platter or bottom of 12-inch pizza pan; drizzle with barbecue sauce.

TOP with bacon, vegetables and Cheddar.

SERVE with crackers.

Halloween is one of my absolute favorite times of the year. I love the decorations, the candy, the costumes. It’s never too early to get ideas for how to make Halloween a little fun this year. This year, with my friend Julie’s help :) , we came up with these cute Halloween cupcakes!~ They are little graveyard cupcakes. It was so easy to make them, and the kids loved them.

My kids and I had a blast making these, they were all able to help. They especially liked the part where they got to crush up the Oreo cookies. Well, that and eating the cremes out of the middle. They were just a little bit hyper after that!

Here’s how to make these great cupcakes:

Pick your favorite white or yellow cake mix. Make per the boxes instructions. (While mixing, add yellow and red food coloring to make it a nice orange color)

Pick your favorite white icing, add green food coloring to it, and then put it in a piping bag with a small tip.

Open a bag of Oreos. Remove all the middles.

Halloween Treats

Place all the Oreos in a bag, and crush with a hammer. (It’s cheaper than therapy) Set aside.

Place paper cups in your cupcake tray before baking. Fill 1/4 of the way with batter. Then sprinkle some oreos on top. Fill cupcakes 3/4 way full with more batter.

Cook in the oven per box instructions.

Let cupcakes completely cool.

While the cupcakes are cooling, you can make your tombstones. You can either cut marshmallows in half and flatten with a meat tenderizer. (Lots of fun) Or you can just buy the marshmallow stackers.

 

Using an edible marker, found at most cooking stores, write on your tombstones.

Insert two toothpicks in to the bottom of the marshmallows.

Place the tombstones on top of the cupcakes.

Halloween Treats

Ice a small section in front of the tombstone to look like a grave, then sprinkle with cookie crumbles.

Continue to ice the rest of the cupcake to look like grass.

It’s that easy. They were fun to make, and even more fun to eat!

Cheesecakes are one of my absolute favorite desserts. They are rich and creamy, but man they are loaded with calories. To make my favorite sweet a little bit lighter, I came up with a way to make mini cheesecakes. They are only about 300 calories a piece, and they are just enough to satisfy that cheesecake craving that has been known to drive a woman wild.

These mini Oreo cheesecakes have oreo cookies crumbled throughout, and top with a single Oreo cookie on top. It adds a nice little touch. Even with out a crust this cheesecake will sure to be a hit at any party you take it to, or just enjoy it at home. Your family will love you for it.

Mini Oreo Cheesecakes

Mini Oreo Cheesecakes

Ingredients

  • 2 Philadelphia Cream Cheese 8 oz Packages (softened)
  • 1 1/2 tsp Vanilla
  • 1 cup sugar
  • 2 eggs
  • 1 cup sour cream
  • Approximately 20 Oreo Cookies (separated)
  • Wax paper

Instructions

  1. Preheat the oven to 350 degrees.
  2. Place the softened cream cheese in a blender with the sugar, and blend until well mixed.
  3. Add sour cream and vanilla, and blend on low until evenly mixed.
  4. Add one egg at a time. Blend on low. (Make sure to scrape the sides so that all the batter is consistent)
  5. Separate 6 Oreos from the filling and set aside.
  6. Take the remaining cookies and coarsely cut them.
  7. Fold the cut cookies into the cheesecake batter using a spatula.
  8. Cut 5X5 in squares of wax paper. Use them to line the cups of a cupcake tin.
  9. Place one Oreo cookie, writing side up, in each tin.
  10. Fill each cup 3/4 of the way full with batter.
  11. Place in the oven for approx. 20 minutes or until center is set.
  12. Cool
  13. Once cool, place in refrigerator for 3-4 hours.
  14. Remove wax paper and serve cookie side up.

RIBS THAT MELT IN YOUR MOUTH

Now onto our recipe! We used a mixture of the dry-rub spices and the Kraft BBQ sauce. They were the most amazing ribs I have ever head. (Being a southern gal, I have eaten my fair share of pork ribs!) They were tender and juicy, and oh so good! I told Mr. Crunchy this was his best feat on the grill yet!

Are you ready to get started? Well, you must at least be ready to see a mouth watering rib recipe! Here’s the recipe that Mr. Crunchy, and I came up with. I am telling you it will be a hit the next time you make ribs at your house!

Ingredients

  • 2 lbs country style bone-in pork spare ribs
  • McCormick Dry Rub Seasonings
  • Kraft Brown Sugar BBQ sauce

Instructions

  1. Make sure ribs are fully defrosted, then rub the outside of the ribs with McCormick dry rub and let set for 10 minutes.
  2. Grill on the grill at medium heat for about 10-15 minutes, until thoroughly cooked.
  3. Baste with Kraft Honey BBQ sauce as you are cooking the ribs. The more, the better!
  4. Remove ribs from grill and let set for approximately 5 minutes.
  5. Slice ribs off the bone and serve!

Nakano Rice Vinegar:Garlic Ginger Chicken Stir Fry

My family absolutely loves Asian cooking  and using rice vinegar. We are always looking for ways to lighten up dishes as well. I have used rice vinegars in my Asian dishes before, but honestly I didn’t realize how many different varieties Nakano has!

Beyond the different varieties, I also didn’t think about how many ways, outside of Asian cooking, you can use Nakano Rice Vinegar. Recently my family was able to try this brand of rice vinegars, and I LOVED putting it on my salads. I normally use  balsamic vinegar and spices to dress my salads. With the Nakano Garlic Rice Vinegar, I figured I would give it a whirl. It was actually really delicious. It gave my balsamic a run for its money.

My husband isn’t too adventurous when it comes to some things, so when we decided to make a dish with our favorite flavor of rice vinegar he opted making one of his favorites; chicken stir fry. Rather than using the regular rice vinegar, we used the garlic flavor in our dish, and it added a great twist to one of our family favorites!

Garlic Ginger Chicken Stir Fry with Nakano Rice Vinegar

Garlic Ginger Chicken Stir Fry with Nakano Rice Vinegar

Ingredients

  • Red Peppers
  • Yellow Peppers
  • Onions
  • Garlic Powder
  • Ginger Powder
  • Boneless, Skinless Chicken Breast
  • Garlic Nakano Rice Vinegar
  • Soy Sauce
  • Jasmine Rice

Instructions

  1. Heat a large skillet, and spray with cooking spray
  2. Place boneless, skinless chicken cut small cubes. Sautee for about 3 minutes
  3. Add Onions and Peppers, Sautee for another 4 minutes.
  4. Splash with Garlic Powder and Ginger Powder to taste.
  5. Once chicken is cooked through out and vegetables are tender remove from heat.
  6. Rice
  7. While Sauteeing chicken and vegetables, prepare 1 cup of rice per bag directions (begin approximately 10 minutes before cooking chicken)
  8. Once rice is complete, mix rice and chicken/vegetable in large bowl and mix together. Splash with Nakano Garlic Rice Vinegar and Soy Sauce to taste!
  9. Enjoy!

Hot Dog Recipe: Garlic Cheddar Crescent Dogs, Perfect Any Time of the Year!

Hot Dog RecipesEating a hot dog is one of my favorite things to do during the summer! Do you have to only eat them on the grill though? Heck no! We love to eat them all year round!

My whole family loves this twist on an American classic, and they are really easy to make. These Garlic Cheddar Crescent Dogs only take the time it takes to bake the crescent rolls. In addition to the cheese, there are so many ways you can dress these dogs up. Add some mustard, ketchup, chili, onions whatever you would add on your regular frankfurter! Get creative with it. Get the kids involved! In celebration of National Hot Dog month, I share with you this great recipe!

Garlic Cheddar Crescent Dogs

Great take on the hot dog. Jazz it up with this simple recipe. Your family will love it

Ingredients

  • 8 hot dogs ( we prefer turkey dogs)
  • 8 crescent rolls (1 tube)
  • Shredded Cheddar cheese
  • Garlic Powder

Instructions

  1. Preheat your oven per the crescent rolls instructions.
  2. Spray a baking sheet and unroll the crescent rolls.
  3. Place a hot dog on top of each roll, and slit the hot dog long ways (not all the way through)
  4. Stuff each hot dog with cheddar cheese.
  5. Roll the crescent roll around the hot dog. Make sure cheese side is up.
  6. Sprinkle more cheese and garlic powder (to taste) on the top.
  7. Bake per crescent package instructions. Enjoy!

Dogs are quite possibly one of the most American foods. Obviously I love mine with lots and lots of cheese on them. This recipe is one of my favorite twists on the hot dog.

Cinnamon roll waffles are an amazing way to spice up breakfast!  They are super easy to make, and they are absolutely amazing! All you need is your favorite cinnamon rolls, a waffle iron, and 5 minutes in the morning! My in-laws gave my husband and I this super cute Mickey Mouse Waffle iron for Christmas, so not only are our waffles delicious, but they are cute as well!

Prep Time: 5 minutes

Cooking with Crunchy: Cinnamon Roll Waffles

Ingredients

  • Pillsbury Grands Cinnamon Rolls
  • Milk
  • Water
  • Vanilla

Instructions

  1. Spray your waffle iron, and let preheat
  2. Place a cinnamon roll onto the waffle iron, and let sit for 2-3 minutes (check often)
  3. Once it's browned it's done!
  4. To make frosting
  5. Take the frosting that comes with cinnamon rolls and place in the bowl.
  6. Add 1 T of Milk
  7. Add 1 t of Vanilla
  8. Stir to blend
  9. Add 1 additional T of milk at a time until you have a slightly runny consistency.

Burger Recipes: Parmesan Garlic Burger

burger recipesLooking for a twist on the all American favorite burger. Everyone has burger recipes in my family, but this parmesan garlic burger recipe is sure to please/surprise them all. It’s really easy to make, plus it’s even a little better for you since it’s made with 99% lean turkey in addition to the regular ground beef. (Shhhh don’t tell them before they try it).  My family loves grilling during the hot summer months, and we are always trying new recipes like this one. It’s amazing how just a few twists make a completely new dish! These easy to make patties are sure to win everyone over at your next family get together!

Parmesan Garlic Burgers

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: 35 minutes

Yield: 7-8 patties

4 oz burger

Ingredients

  • 1 pound 99% Lean Jennie-O ground turkey
  • 1 pound ground top sirloin
  • 1/2 cup freshly grated parmesan cheese
  • 3 T McCormicks Hamburger Grillers Seasoning
  • 3 T Worcestshire Sauce
  • 2 T Garlic Powder

Instructions

  1. In a large bowl place the ground turkey and sirloin.
  2. Add all of the other ingredients in bowl, and mix together with your hands until well blended.
  3. Grab small balls of the mixture and flatten out into patties
  4. You should have about 7-8 patties when they are all flattened out.
  5. Preheat outdoor grill on high for about five minutes
  6. Cook burgers about 5 minutes on each side until desired level of doneness
  7. Serve on a whole wheat bun with your favorite burger toppings!

The first time Mr. Crunchy had this recipe, he instantly fell in love with it. He always whined that turkey burgers were too dry. By adding a little bit of beef to this recipe, it helps give the burger some moisture and a little added flavor. The rest of the flavor comes from the aged parmesan and the garlic. (He can never have TOO much garlic, I don’t mind as long as there is a toothbrush handy ;) )

Old London Melba SnacksIt’s summer time, and I am always looking for a way to give a twist to an old family favorite. During summer time, my mom always used to make these great desserts called strawberry delight pretzel bakes. They were made with a layer of pretzels, cream cheese, and strawberry yumminess.

Recently,  I was able to try some of the great products made from Old London. They have a amazing line of crackers and snacks. My mom used to eat their melba toast religiously when I was a kid. When I got a hold of the sea salt melba snacks, and I just knew that they would make an amazing substitute in this recipe!

I was trying to make this recipe a little bit more nutritious. Why not give it a whirl with one of my favorite products from Old London. The sea salt melba snacks have a light salty flavor that blend extremely well with a little sugar and cream cheese. They are made with whole wheat, so they are full of fiber and flavor. Plus they made a great extra twist to this fan favorite.

Strawberry Delight with Old London!

Ingredients

  • 12 oz cream cheese (softened)
  • 1 box Old London Melba Snacks Sea Salt Flavor
  • 1 cup sugar
  • 8 oz whipped cream
  • 1/2 cup butter (melted)
  • 1 large box strawberry jello
  • 1 15 oz. bag frozen strawberries.

Instructions

  1. In a food process, place the melba snacks and process until they are a fine powder.
  2. Add 1/2 cup sugar, then mix to combine.
  3. Add 1/2 cup of melted butter, and then press into a greased 13X9 pan.
  4. Refrigerate for 1-2 hours
  5. Blend the softened cream cheese and 1/2 a cup sugar until fluffy.
  6. Mix in 8 oz whipped cream.
  7. Spread over bottom layer, and refrigerate for 1-2 hours.
  8. Bring 2 cups of water to a boil, then dissolve jello mix.
  9. Remove from heat, add 1 cup cold water and frozen strawberries.
  10. Mix until slightly thicker, then spread on bottom two layers.
  11. Refrigerate for 2-4 hours until set.

  • One whole watermelon (halved and hulled)
  • 1 pound of green grapes
  • 3 pints blackberries
  • 4 bananas (sliced)
  • 2 pints strawberries (sliced)
  • 1/2 pound nectarines (sliced and peeled)
  • 3 pints blueberries

Instructions

  1. Clear off a large amount of counter space, and cut watermelon in half.
  2. Use a melon baller to remove all of the watermelon, and place balls in large bowl.
  3. Prepare the rest of the fruit, and then place back into the watermelon hull.
  4. Serve with a spoon

Scrumptious Blackberry Jam

Summertime is full of tons of great berries: strawberries, blueberries, raspberries, and let’s not forget blackberries. Blackberry Jam is a great way to have some blackberries all year round.

An 8 oz. jar of blackberry jam usually runs around $3 a jar. With making your own, you not only save money, but you know exactly what is in your jam! You can adjust your sugar levels or choose to use organic berries. You might even decide to get creative and mix them up!

Buy your blackberries when they are in season, and the riper the better. The more ripe your berries the less sugar you have to add to your jam!

Cooking with Crunchy: Homemade Blackberry Jam

Ingredients

  • 5 cups crushed blackberries (about 6 pints)
  • 7 cups of sugar
  • 1 1/2 packages (1.75 oz boxes) of pectin

Instructions

    Prepare your jars
  1. Sanitize your jars and lids. Dry and set aside.
  2. Prepare your berries:
  3. Wash your blackberries, and pat dry.
  4. Place blackberries in large bowl, and with potato masher crush blackberries.
  5. Get Cooking:
  6. Put crushed blackberries in a large stock pot on medium heat.
  7. Gradually stir in pectin, and once all stirred in place on high heat. Stir occasionally.
  8. Once blackberries are proud to a hard boil, add the sugar.
  9. Stir the sugar mixture continuously.
  10. Bring back to a hard boil, and boil for 1 minute.
  11. Remove from heat.
  12. Fill Jars and Preserve:
  13. Use ladle to fill jars, leaving about 1 inch from top..

With summer right around the corner, all sorts of wonderful fruits and vegetables are going to be coming into season. That means you need to grab yourself a whole bushel, and get to canning!

We learned to can about two years ago. It started as a way to enjoy fruits and veggies year round.  The first year, I couldn’t can fast enough. As soon as I was done, everything would be gone because my children ate it all. I threatened their lives the second year, and miraculously I still have some things I made from last season. (No, not literally)

This year strawberries are already in season! Strawberry ice cream, strawberry short cake, strawberry pancakes…..and don’t forget about strawberry jam!! That stuff is wicked expensive at the grocery story. (like $4 for a tiny jar, YIKES!) This year I set out to conquer the world of jams, and strawberry was my first victim!

This recipe is amazing, and its super easy even a baby could do it. (Do I really need to put “not literally” here, people come on!) I spent about $16 to make 11 8 oz jars of jam. That would’ve cost me almost $50 at the grocery store! Who’s the frugal rock star?!? You know it! Back to our regularly scheduled programming.

Homemade Strawberry Jam Recipe

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Homemade Strawberry Jam Recipe

Ingredients

  • 5 cups of crushed strawberries (about 4 pints of strawberries)
  • 7 cups sugar
  • 1 1/2 (1.75 oz) boxes pectin
  • 1/4 lemon juice

Instructions

  1. Make sure your jars and lids are sterile before beginning making the jam.
  2. Clean and hull the strawberries and place in a medium bowl.
  3. Crush strawberries with a potato smasher.
  4. Pour strawberries into large stock pot, and then mix with 1/4 cup lemon juice.
  5. Over medium heat, gradually add pectin.
  6. On high heat bring to a rolling boil.
  7. Add sugar, and stir constantly.
  8. Bring to a hard boil and let boil for 1 minute.
  9. Remove from heat, and then fill leaving about 1 inch from top of jar.
  10. Place lid on jar, and place in water bath to preserve.
  11. Follow instructions for canning found in Ball Complete Book of Home Perserving

Low Country Shrimp BoilCorn Fritters, corn dumplings, corn pancakes, corn on the cob. (ala Forest Gump) The sky is the limit when it comes to corn recipes.  When summertime comes around, that’s one thing that is always on the menu: fresh sweet corn!

Growing up in Savannah, a dish that was always on our table was low country shrimp boil. Of course, any shrimp boil isn’t complete without the freshest corn you could find. It’s always so plump and juice, you end up needing a bib for all the sweet corn juice dribbling down your chin!

You definitely have to know what you are doing when you boil the corn though. To get the best sweet corn, make sure to check out these tips on how to boil your corn.

Low Country Shrimp Boil: Amazing with fresh sweet corn!

Ingredients

  • 3 pounds of raw unpeeled shrimp
  • 6 ears of sweet corn on the cob (cut into thirds)
  • 2 T Old Bay Seasoning
  • 2 links Kielbasa sausage (cut into 4 inch pieces)
  • 10 red potatoes

Instructions

  1. Fill a large pot with water and add Old Bay seasoning, bring to a boil
  2. Once boiling, add potatoes and sausage. Boil for 20 minutes
  3. Add corn, and boil for additonal 10 minutes
  4. Add shrimp, and boil for final 2-3 minutes until shrimp is pink
  5. Drain water and serve

Can’t enough corn during the summer, well you’re in luck. Corn is relatively easy to enjoy year round. It makes the most fabulous sweet corn chowder to warm you up on a winter morning, or better yet corn fritters covered in powdered sugar. Now that is an amazingly easy springtime treat! When I go out to the local deli, my absolute favorite dish to order is a french dip sandwich. There is something about the melty, cheesy, meaty goodness that makes my mouth water. (Is yours watering yet??)

The only problem is they can be expensive to buy all the time at $8-$9 a sandwich. So, to lighten the burden on my wallet, I set out to recreate my favorite sandwich at home. This sandwich is amazingly easy to make, and you can add your own twists to make it your favorite indulgence too! Now onto the french dip sandwich recipe!

Amazingly Easy French Dip Sandwich Recipe
Recipe Type: Entree
Prep time: 5 mins
Cook time: 15 mins
Total time: 20 mins
Serves: 6
Ingredients
  • 1 pound thinly sliced roast beef
  • 1/2 pound provolone cheese
  • 1 clove garlic
  • 1/2 small onion
  • 1 McCormick Au Jus packet
  • 6 Mini Sub Rolls
  • 1 T Butter
Instructions
  1. In a sauce pan, gently sautee the garlic and onions until soft.
  2. Add the Au Jus Packet, and follow instructions on preparation.
  3. Once Au Jus is complete, add roast beef into au jus and let soak for approximately 5 minutes.
  4. While roast beef is simmering, lightly butter the inside of the sub rolls and place in a frying pan to toast the insides of the rolls.
  5. Lay buns toasted side up, then place 2-3 slices of roast beef on each sandwich.
  6. Cover with 1-2 slices of provolone cheese, and onions (if desired)
  7. Ladle out the au jus in separate ramekin for dipping.
  8. Enjoy!

Banana Muffins RecipesOne of my absolute guilty pleasures is banana bread. It’s a great way to use bananas that are too mushy too eat. Bananas that are super mushy are disgusting to eat, but make the most delicious banana bread. Did you know that if your bananas are ready to use for breads or muffins, but you aren’t ready to make them you can actually freeze the bananas! Buy the bananas that are on clearance in your produce department to save big bucks, freeze them, and defrost them 2 hours before you are ready to bake!

Banana Muffins

Ingredients

4 ripened bananas (thawed)

2 cups all purpose flour

2 T cinnamon

1 cup sugar

1 stick butter (room temperature)

1 t baking soda

1 t baking powder

1 t salt

2 eggs

Total Cost for these muffins: approximately $1.75 for 12 muffins!

Directions

Preheat oven to 325

If your bananas are frozen, set them out to defrost for two hours.

Banana Muffins Recipes

Once your butter is room temperature, blend the sugar and butter together in a mixer until light and fluffy.

Once mixed, add 1 egg at a time to the sugar/butter mixture.

In another bowl, mix all of the dry ingredients and mix together with a whisk.

Add bananas to sugar mixture and blend until mixed in.

1/2 a cup at a time add the flour mixture to the banana/sugar mixture and blend just until all the flour is gone. (Mixture should be lumpy)

Grease a 12 cupcake pan with butter. Fill them 3/4 full with the batter.

Place in oven at 325 for approximately 20-35 minutes or until toothpick comes out clean.

Let rest for 5 minutes before removing and setting on a cooling rack.

Crock Pot Recipes: Barbecue Beef Brisket with Garlic Rosemary Focaccia

Being a girl from the South, barbecue is in my blood. I think I was raised with a pulled pork sandwich in one hand and hush puppies in another. (If you don’t know what hush puppies are, you should hang your head in shame!) My husband is a genious when it comes to the crock pot! Yep, the crock pot. It’s one of the easiest dishes we make when we have a really busy day. This is his latest creation using a Charcrust Barbecue rub we were able to find, and it happens to be on of my favorite crock pot recipes!

 

Barbecued Beef Briscit Recipe Ingredients

A Corned Beef Brisket (leave out the corning spices)

Your favorite whiskey (Jack Daniels is a good choice)

Charcrust Dry Barbecue Rub

Garlic Powder

Pepper

Beef broth

Focaccia Bread

Garlic Powder

Butter

Directions

Open your beef brisket, rinse off and pat dry. Take the Charcrust Barbecue Dry Rub and coat the brisket before place it in the crock pot

Put your crock pot on low, and then place in your beef brisket.

Add 1-2 shots of your favorite whiskey to give it a little kick.

Cover the brisket with 16 oz of beef broth, then if still not covered add water until meat is covered.

Sprinkle in garlic powder and pepper to taste.

Put lid on crock pot, and cook on low for approximately 4-6 or under brisket pulls apart easily with fork.

When brisket is done, preheat the oven to 350 degrees.

Butter the focaccia bread, sprinkle with garlic powder and rosemary.

Put in the oven for about 5-10 minutes until golden brown.

Now it’s ready to serve. This meal takes about 5-15 minutes tops in bread time, and it’s absolutely delicious!

Tuna Noodle CasseroleJust because you want to make frugal recipes, doesn’t mean that you have to sacrifice taste. This is the best of the tuna noodle casserole recipes, and I have been having it since I was a little kid. It is one of my all time favorites. The best part is you can feed a family of 6-8 for around $5! I would definitely classify it as one of my all time favorite comfort foods!

Ingredients

1 cans tuna in water (drained) (75 cents)

1 cans sweet corn (drained) (65 cents)

1 cans cream of mushroom soup (70 cents)

8 oz cheddar cheese ($1.29 bought locally)

16 oz box of macaroni noodles (50 cents)

Total Cost $3.89 or 48 cents a serving

Directions

Preheat oven to 350 degrees

Place a large pot full of water on stove to boil. Once boiling place noodles in, and boil them until tender (approximately 15 minutes)

Open all cans, drain (if applicable), and place in 13X9 baking dish.

Drain pasta and place in baking dish. Then use large spoon to mix all ingredients together until pasta is thoroughly coated.

Sprinkle the top with cheddar cheese.

Place in oven for approximately 25 minutes until cheese is melted and bubbly.

 

Rice Krispies Treats with mini M&Ms

Rice Krispies TreatsI am always looking for ways to make a twist on a classic. Recently, I had a craving for chocolate and Rice Krispies treats so I got a little creative. They were not only delicious but super easy! My kids love these as a special treat or an easy dessert night!

Ingredients

  • 5 cups Rice Krispies
  • 1 1/2 packages of Jet Puffed Large Marshmallows
  • 4 T butter or margarine
  • 1/2 bag M&M minis
  • Plastic Wrap
  • 8X8 or 8X13 pan

 

 

 

Directions

Place the butter in a large stock pot and let it melt.

Rice Krispies Treats

Then add the marshmallows, and stir constantly until it is melted. (resembling marshmallow fluff)

 

Remove from heat and stir in Rice Krispies. Stir until they all are thoroughly coated.

Wait a few minutes, then add the M&Ms (gently fold them in)

Place in a non-stick baking dish (or spray with non-stick spray)

Use plastic wrap to press them down and make them even.

Let cool for about 5 minutes, then sprinkle more M&Ms on the top.

Press down again with plastic wrap.

Cut and serve!

 

Homemade Enchiladas Recipe

I love Mexican food. It is a vice I have, so in the effort of being frugal I have set out to learn how to make some of my favorite Mexican restaurant dishes. First up is enchiladas. I could literally eat my weight in enchiladas. (Ok, yes I would probably be sick, but it would be so worth it!)

Enchilada plates at a Mexican restaurant are usually $14 each! I can make a meal for my whole family for much less than that! Enjoy trying out this uber delicious enchiladas recipe!

Total Cost of this dish is approximately $10-$12, plus it feeds 6-8!

Ingredients

12 flour tortillas (I know it should be corn, but family doesn’t like those)

1 1/2 lb ground turkey or beef

Cumin

Chili Powder

1 8 oz jar tomatoes with chilis

8 oz cheddar cheese

2 4 oz cans mild enchilada sauce

Directions

Preheat oven to 350 degrees

In a large frying pan, brown the meat. Drain the tomatoes with chilis and add to the browned meat.

Add cumin and chili powder to taste. Drain and set aside

In a 13X9 baking dish, fill the flour tortillas with the browned meat. Roll and place opening on the bottom to make sure they remained closed.

Once done filling all the shells, cover all of the enchiladas with enchilada sauce.

Cover the entire pan with cheddar cheese.

Place in the oven until the cheese is melted and the sauce is slightly bubbly. Approximately 20-30 minutes.

Enjoy!

 

Seafood Brochettes

I have been cooking a lot more lately, so I thought I would give myself a challenge and try a new dish that I hadn’t made before. I found this fabulous seafood brochette recipe from Le Creuset. It looks absolutely divine!

Le Creuset specializes in a great line of quality cookware. What I loved about their site is that I could not only drool over all the cookware I wanted to add to my kitchen, but I could also find fantastic recipes. That is where I got this recipe from.

I am by no means an expert cook, but even I was able to tackle this recipe. The combination of seafood is so delicately accented by the Hollandaise sauce. This was my first experience with the creamy, succulence that is Hollandaise. It was so divine I think I could’ve drank the whole thing.

Even though the sauce was easier than I thought to make, I did wish the language of the recipe was a little bit more beginner cook friendly. There were a couple terms, like “on the hob”, that I had no clue what it meant. Even with the newbie language barrier, I was still impressed with my dish!

If you are looking to adventure outside of your comfort zone, you have to try this recipe. If seafood isn’t your thing, then head over to the recipe section at Le Creuset and find many other fabulous dishes to try! They are neatly organized by cuisine, meal time, and even category. It’s very user friendly.

For those that want to try this recipe, this is what you need to make this delicious dish. It yields about four servings.

 

 

 

Ingredients

White wine hollandaise

½ cup dry white wine ( I chose a nice Pinot Grigio)
1 bay leaf
1 teaspoon peppercorns
3 egg yolks
1 ½ sticks butter
½ cup fish stock reduced to ¼ cup
Or ¼ cup double strength fish stock from a cube
Freshly squeezed lemon juice
Salt and pepper

Instructions:

To make the brochettes

Place the seafood onto a skewer adding one bay leaf per piece
Mix the olive oil, lemon juice and seasoning in a small bowl and brush onto the brochettes. Cover and let marinate in a cool place for 1 hour.

Hollandaise preparation

Pour the white wine, bay leaf and peppercorns into a small pan and reduce to about 2 tablespoons. Strain the liquid  and set aside.  Make sure to clean the pan.
Fill a medium saucepan to about a ¼ full with water, place it on a medium heat and bring to a gentle simmer. Place on a lid until and set aside until needed.
Heat the butter in the clean small pan until just melted. Set to one side.

To cook the brochettes

Turn the grill up to a medium heat. (You can place them directly on the grill or use a great grill pan too)
When the grill is ready, lightly brush with vegetable oil. Pat away any excess moisture from the brochettes using some paper towels and cook on the grill for 3-4 minutes without turning, once sealed and nicely bar marked, turn and cook the other side.
Place the cooked brochettes in a dish, cover and keep warm while making the hollandaise.

To make the Hollandaise

Whisk together the egg yolks and the white wine mixture in a large bowl.
Place the bowl over the just simmering water and whisk continuously and vigorously until thickened and the foam will make a trail.
Remove the bowl from the heated water and whisk in 2-3 tablespoons of the melted butter, return the bowl to the pan of hot water and whisk for 1 minute. Repeat this until all the butter has been incorporated. To prevent the outer edges cooking too quickly scrape the sides of the bowl as you whisk, this will keep all the sauce at the same temperature and prevent lumps. The end consistency should be like thick mayonnaise.
Add the reduced fish stock a little at a time whilst continually whisking over the water. Season to taste with a squeeze of lemon juice, salt and pepper.
Pour into a warmed well insulated sauce jug or warmed individual small dishes and serve immediately with the cooked brochettes.

Trust me, it sounds a lot more complicated than it is. Before trying this dish, make sure to read through all the instructions and have a good understanding of what you are supposed to do. Then enjoy! You can thank me later!
